What should I look for first in a fiber laser engraver?
The source type, ahead of the wattage. A MOPA source lets you set the pulse duration, and that one adjustable parameter is what produces colour on stainless and lets you mark thin anodised aluminium without burning through. Wattage changes how fast the job runs; the source changes what the job can be.
How is this list ordered?

Will a fiber laser do wood and acrylic too?
No, and this is the most common expensive mistake in the category. The wavelength that makes fiber excellent on metal is largely ignored by organic material and passes straight through clear acrylic. If you need both metal and wood, you are looking at two machines or at a dual-source machine that carries both.
